Vegan Dinner with Friends | Mac n Cheese & Apple Crumble Recipes

I went round to my friend Ailsa's house at uni to cook up some good vegan food! Find the recipes down below...

VEGAN MAC N CHEESE:

- Roast up a butternut squash in some olive oil for 40-45 minutes until it's nice and soft alongside 2 garlic cloves

- Add the squash to a blender with about a cup of soy milk, a splash of lemon juice, 2 generous tablespoons of nutritional yeast, half a teaspoon of vegetable stock powder, salt, pepper and the roasted garlic and blend it all up!

- Boil your pasta and some broccolini

- Drain the pasta and place back on the heat, stir in the sauce and add extra soy milk/nutritional yeast to desired consistency and flavour

- sprinkle on some thyme and serve with broccolini

APPLE CRUMBLE:

- Peel and chop up apples and place in a roasting dish

- sprinkle on a teaspoon of nutmeg and a teaspoon of cinnamon and a generous sprinkle of caster sugar

- bake at 180 degrees celsius for a good 20-30 minutes until the apples are soft, use a potato masher to break the apples up a little and release juices

- In a mixing bowl combine a cup of wholemeal flour, half a cup of oats, half a cup of caster sugar and a quarter to a half a cup of coconut oil

- spread this mixture over the top of the apples and bake for a further 20 minutes

- serve with alpro vanilla ice-cream
